4 medium, baking apples like Granny Smith or Honeycrisp
1 1/2 cup of fruit and nut granola
4 Tbsp. Greek Cream Cheese
1 Tbsp. brown sugar
1/2 Tsp. ground cinnamon
1/4 Tsp. ground nutmeg
1/3 Cup of apple cider or apple juice
Preheat oven to 350 degrees. Core apples leaving a space at the bottom to hold contents. Place apples in a 2-quart baking dish. Mix granola with sugar, cinnamon, and nutmeg in bowl and spoon mixture into cored apples. Pour apple cider into baking dish. Bake apples for about 45 minutes, spooning liquid over apples every 15 minutes or so until fruit Is softened.
Serve warm apples with a heaping tablespoon of Greek Cream Cheese and a sprinkle of granola on each. Top with warm maple syrup (optional).
